I Know…

I know summer is on the horizon (despite Dallas’ recent cold front)…

…when the garden is yielding the most beautiful bounty.

…when a brightly colored bowl of apples serves as appropriate table decor.

…I dream about these smoothies for breakfast.

…when this salad serves as lunch and dinner for several days.  I double the dressing recipe.

 How do you know when summer is on the horizon?

Summer Smoothie

Sometimes, a smoothie can solve all problems.

For instance, when you are sweaty in the morning because you spent the night under your winter sheets, a smoothie really can perk you right up.

Or, when you ate an inordinate amount of pizza for dinner, and you really need to fill your taste buds (and body) with normal whole foods, a smoothie can jump-start your road to good eating the next day.

This is my go-to all-around-great summer smoothie.  And, it’s SCD approved!

Summer Smoothie

Ingredients:

  • 1 cup frozen blueberries
  • 2 handfuls of organic spinach
  • 2 tbsp honey, adjust to taste
  • 1/2 cup unsweetened coconut milk

Directions:

  1. Add all ingredients into blender until you are left with a magnificent and refreshing smoothie.

I added natural peanut butter and almonds.  Next time, I’ll use more drippy peanut butter, but the flavor was all there.  The almonds add the perfect crunch while giving you all the antioxidant goodness.

My Pumpkin, My Love

Oh pumpkin, my pumpkin.

I, like most other people this time of year, have been obsessed with pumpkin!!  I have been throwing globs of canned pumpkin in my oatmeal and smoothies.  Delicious is an understatement.

So, I took a hint from Deb at Smitten Kitchen and decided for my next healthy pumpkin concoction – pumpkin butter!

And can i tell you?  It’s vegan (look at me go).  It’s delicious.  It’s a keeper!

Here is my rendition of Deb’s recipe:


Start with the good stuff

Stir, stir, stir…

And after more stirring, you, my friend, have the most delicious topping for your morning oatmeal,

SIABS,

and goes wonderfully with vegan mandel bread!

On an exercise note, I have been keeping up with the C25K program and it’s going quite well.  I just did Week 3, Day 1.  I am so freaking proud of myself for keeping up with the program!!

I feel like I should not say anything in an attempt to avoid jinxing myself, but i can’t help but feel proud!!  [I’m currently patting myself on the back on your behalf.  Trust me – if you were here, you would do the same.]
