Spring Forward

Spring is truly here.  Warmer winds are sneaking up on us, and the flowers are in bloom.  If you live in Texas, you probably notice the abundance of Bradford Pear Trees in full glory – and what a sight to see.

Usually by this time, I realize that my body and mind are ready for a rejuvenation.  I usually put aside my winter hibernating actions (i.e. eating heavier foods, not exercising as much, keeping indoors, etc.) and start a new healthy regimen.  There is no official regimen.  But, as the coats, scarves and turtlenecks are exchanged for breezy blouses, tank tops and shorts (gah!), I naturally start changing things around.

What does this mean?

–  More walking – I have no excuse to sit my butt at home hiding from the cold.  So, I get out there and walk and the pups loves it!  The walks eventually include little bursts of jogging.

–  More juicing –  When the winter comes, I put aside my juicer for warmer fare.  But, when the climate is warm, the juicer is brought back to life.  The combinations and nutrients are endless.

–  More water –  It should come as no surprise that springs quickly turn into summers in Texas and the heat jumps along with it.  My body naturally requires more water and I make sure to drink up.

–  More whole foods – When the spring bounty arrives (hopefully from my very own garden), I love using every vegetable possible in every cooking method possible.  Kale is a favorite!

–  More raw foods – I make the switch from soups to salads.  And talk about versatility!  Salads are the best example, but there are ton of other ways to include raw foods into your diet.

–  More Whole Foods:  It doesn’t help/hurt (depending on the day and my wallet) that I work right across from a Whole Foods – meaning it takes me 5 minutes to walk to it (pending I don’t injure myself crossing the street).  And, we do.  We get our office water from there so while Binks fills up, I explore.  Recently, I bought this:

Mind you, I have the Berry flavor and I throw it into smoothies and Whole Foods apple juice (per their sampling).  I think the Berry flavor works perfectly with smoothies as it gives the whole smoothie a much-enjoyed pop!

Now, while I bought the Chocolate flavor, I have no idea what to do with it.  Any suggestions/links?

The Times They Are a-Changin’

I have been eating pretty well recently (both in deliciousness and health).  I have maintained a plant based/centered diet for the past week and a half (at least), and I honestly can say that I feel better!

I feel great about myself that I have stuck to this.  It’s not a diet, it’s not a trend, it’s not a phase.  It’s just a conglomeration of my choices!

If you would have told me a year ago that I would put down my pancakes, bacon and eggs and picked up on of these for breakfast, I would have laughed at you.

Then I would have really gotten a chuckle out of it, if you told me that I would slurp this and call it delicious!

Present me:  It is so so delicious!

Remember when I said eating color is key?  Take a look at my lunch/breakfast prep table:

I am very proud of myself.

I have cut out the mayo addiction, and introduced myself to hummus instead:

I never skimp on the veggies:

And I have discovered the nooch:

And, I have to say, I don’t miss the meat.

Does that mean I passed up the sample of beef with a red wine reduction from Central Market?  Nope!

But, I didn’t buy the ingredients to make at home, and left with some tempeh instead.  Simply Shaka has some fabulous meal ideas for tempeh that I’m wanting to try out!

I have to say that it took me a while to figure out that there is no magic cure for my health/weight issues.  It’s a day by day lifestyle change that comes from me wanting to and not just because it’s in a program.

And, my way is much more worth it!

Side note/question:  This weekend I’ll be making some delicious Indian food, including naan, daal makhani and vegan kheer.  Anything you want me to try out?  I have space for one more dish and I am willing to take reader requests for recipes!

Give me some chocolate or I’ll cut you!

In the beginning I hated Glee – but something happened with the Britney episode that got me hooked!  Now, while I may not admit so readily that I love it, I do find myself looking forward to it every Tuesday!

Brittany and Sue make me LOL.

Between getting home at 6:15 p.m. and the show, I had time to make a delicious and healthy meal!

In the beginning, I didn’t know kale. Now, I LOVE LOVE LOVE kale.  I began by using it in smoothies and have moved onto sides.

I love the taste – not too bitter (like spinach can be sometimes) and offers a crunch even after cooked!

This combo for some reason worked fabulously.


–  1 chicken breast

–  1 tbsp Worcestershire sauce

–  salt and pepper, to taste

–  1/8 tsp garlic powder

–  1/8 tsp onion powder

–  Saute in pan with some olive oil until cooked through and through.

–  Remove the chicken from pan and set aside – keep warm.

Warm Chickpea Kale Salad

–  1 can (14 oz) chickpeas

–  5 pieces of kale, chopped (use more or less – I wanted to save some for this morning’s smoothie!)

–  salt and pepper, to taste

–  1 tbsp parsley, chopped

–  1/2 of lemon’s juice

–  1/4 cup onion

–  2 cloves garlic

–  1 tbsp olive oil

–  Using the chicken pan, heat olive oil and saute onion and garlic on medium heat.

–  Scrape up any chicken goodness left on the pan and incorporate with the onion and garlic.

–  Saute for approx 3 minutes – until onion has softened and browned slightly.

–  Add chickpeas and stir for 1-2 minutes.

–  Add kale and juice from lemon, stir, and cover for 7  minutes, until kale has wilted.

–  Uncover and add parsley.

–  Stir for another 4 minutes to incorporate everything.

–  Serve with chicken!

The Inevitable Mistakes

I swear – I always make some kinda asinine error!!!!  Whether it be work, cooking, cleaning, you name it – I’ve messed it up in some random a$$ way or another!

I think I do thing too fast or I don’t take the time to just focus prior to doing something.  Most people (it appears to me), when running on auto pilot seem to be flying the ‘right’ way and doing the ‘right’ things.

I on the other hand, when running on auto pilot put the tea kettle in the refrigerator, forgets to keep her mouth closed while brushing and has toothpaste dripping down my shirt (unfortunately this is so unfortunately true), and drives miles and miles before realizing her right turn to get home happened 2 miles ago!  Argh seems appropriate right now.


Well, now that you know what happened to me yesterday, here’s what happened this morning!

This would be the birds-eye view into my blender.  I love kale.  I just started incorporating it into my menus and has only been used for breakfast.

(Need to try these soon!)

The final product?  The BEST ever smoothie I have made to date!


Inside you can find the following:

–  1 frozen banana

–  2 big leaves of kale

–  2 tbsp of almonds

–  1 tbsp flax seed

–  1 tbsp chia seeds

–  1/2 cup frozen blueberries

–  1/4 cup rolled oats

–  1/2 cup almond milk

–  1 small scoop Amazing Grass – Berry

Gave it a whirl and added:

–  Homemade coconut butter

–  Honey almond granola

Here is to less mistakes both on auto-pilot and manual! 😉 Happy Hump Day!
